Roasted Vegetable Tacos



These Roasted Vegetable Tacos are a flavorful and healthy vegetarian option for taco night. The combination of roasted veggies, fresh toppings, and creamy sauces makes them a crowd-pleaser.

Ingredients:

  • 2 cups mixed vegetables bell peppers, zucchini, onion, mushrooms, etc
  • , sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 8 small taco tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • Lime wedges for garnish

Instructions:

Turn on your oven and heat it up to 425F 220C

Coat the sliced vegetables well with olive oil, chili powder, cumin, salt, and pepper in a large bowl

Place the seasoned vegetables on a baking sheet in a single layer

Roast them in a hot oven for 20 to 25 minutes, or until they are soft and slightly browned

Warm up the taco shells in the oven for a few minutes while the vegetables roast

Put together your tacos once the vegetables are done

A spoonful of roasted vegetables should be put on each tortilla

Then diced tomatoes, red onion, cilantro, and shredded cheddar cheese should be added on top

Add sour cream and salsa to each taco, and then top with lime wedges
