Vegan Cobb Salad with Watermelon Bacon



This Vegan Cobb Salad with Watermelon Bacon is a refreshing twist on the classic Cobb salad. The smoky-sweet flavor of the watermelon bacon pairs perfectly with the crisp veggies, creamy avocado, and tangy dressing.

Ingredients:

  • 1 small watermelon, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp liquid smoke
  • 1 tsp maple syrup
  • Salt to taste
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked chickpeas
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pumpkin seeds
  • 1/4 cup vegan cheese, crumbled optional
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

Before you start cooking, heat the oven to 375F 190C

Mix olive oil, liquid smoke, maple syrup, and salt in a small bowl with a whisk

Use the mix to cover both sides of the watermelon slices

Put the slices of watermelon on a baking sheet that has parchment paper on it

Bake for 15 to 20 minutes, flipping once halfway through, until slightly crispy

Romaine lettuce, cherry tomatoes, chickpeas, avocado, red onion, pumpkin seeds, and vegan cheese should all be put in a large bowl and mixed together

Add olive oil, Dijon mustard, salt, and pepper to a small jar

Use a whisk to mix the ingredients to make the dressing

Pour the dressing over the salad and gently toss it all together

Put the watermelon bacon on top of the salad

Serve right away and enjoy!
