Sunday Slow Cooker Falafel



Take it easy on Sunday with these homemade falafels that are easy to make in a slow cooker. They are tender and perfectly spiced, and they go well with any meal.

Ingredients:

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions:

Soak the chickpeas and put them in a food processor with the garlic, onion, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper

Use pulses to turn the mixture into a thick paste

Make small balls or patties out of the mixture with your hands

Cover the slow cooker and grease it with oil or cooking spray

Put the falafel balls or patties in the slow cooker so that they are all in one layer

Put the lid on top and set the heat to low

Cook for four to five hours, or until the falafel is fully cooked and the outside is golden brown

You can eat it hot with your favorite sauce or in pita bread with salad
