Ingredients:
- 8 oz pasta
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1/4 cup balsamic vinegar
- 1/2 cup vegetable broth
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped
- Grated Parmesan cheese, for serving
Instructions:
Follow the directions on the package to cook the pasta until it is al dente
Remove the water and set it aside
Warm up the olive oil in a big pan over medium-low heat
For about one minute, until the garlic smells good, add the minced garlic
It will take about 5 to 7 minutes for the mushrooms to start to brown after you add them to the pan
Put in the vegetable broth and balsamic vinegar
It will take about 5 minutes of simmering until the liquid is cut in half
Add pepper and salt to taste
Toss the cooked pasta in the mushroom balsamic sauce after adding it to the pan
Add some fresh parsley on top, and serve it hot with grated Parmesan cheese
