Vegan Salted Caramel Espresso Cheesecake



Enjoy how creamy and rich this vegan salted caramel espresso cheesecake is. When you mix espresso, caramel, and a little salt, you get a rich dessert that's great for any event. Plus it doesn't have gluten, so everyone can enjoy it!

Ingredients:

  • 1 cup raw cashews, soaked overnight
  • 1 cup gluten-free oats
  • 1/2 cup dates, pitted
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 2 tablespoons almond butter
  • 2 tablespoons espresso powder
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/2 cup coconut cream
  • 1/4 cup coconut sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions:

Warm the oven up to 175F 350C

Gluten-free oats, dates, coconut oil, maple syrup, almond butter, espresso powder, vanilla extract, and a pinch of sea salt should all be mixed together in a food processor until a sticky dough forms

To make the crust, press the dough into the bottom of an 8-inch springform pan that has been greased

Once the crust is done, take it out of the oven and let it cool

Soak cashews in water, then blend them with coconut cream, coconut sugar, coconut milk, vanilla extract, and sea salt in a blender until the mixture is smooth and creamy

On top of the crust that has cooled, pour the cheesecake filling

It's best to leave the cheesecake in the fridge overnight, but at least 4 hours is fine

After it's set, drizzle it with more melted coconut oil and salt it with sea salt

Vegan Cobb Salad with Watermelon Bacon



This Vegan Cobb Salad with Watermelon Bacon is a refreshing twist on the classic Cobb salad. The smoky-sweet flavor of the watermelon bacon pairs perfectly with the crisp veggies, creamy avocado, and tangy dressing.

Ingredients:

  • 1 small watermelon, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp liquid smoke
  • 1 tsp maple syrup
  • Salt to taste
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked chickpeas
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pumpkin seeds
  • 1/4 cup vegan cheese, crumbled optional
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

Before you start cooking, heat the oven to 375F 190C

Mix olive oil, liquid smoke, maple syrup, and salt in a small bowl with a whisk

Use the mix to cover both sides of the watermelon slices

Put the slices of watermelon on a baking sheet that has parchment paper on it

Bake for 15 to 20 minutes, flipping once halfway through, until slightly crispy

Romaine lettuce, cherry tomatoes, chickpeas, avocado, red onion, pumpkin seeds, and vegan cheese should all be put in a large bowl and mixed together

Add olive oil, Dijon mustard, salt, and pepper to a small jar

Use a whisk to mix the ingredients to make the dressing

Pour the dressing over the salad and gently toss it all together

Put the watermelon bacon on top of the salad

Serve right away and enjoy!

Low Carb Raspberry Almond Crumble Cake

Ingredients:

Ingredients:

  • 8 oz pasta
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/4 cup balsamic vinegar
  • 1/2 cup vegetable broth
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • Grated Parmesan cheese, for serving

Instructions:

Follow the directions on the package to cook the pasta until it is al dente

Remove the water and set it aside

Warm up the olive oil in a big pan over medium-low heat

For about one minute, until the garlic smells good, add the minced garlic

It will take about 5 to 7 minutes for the mushrooms to start to brown after you add them to the pan

Put in the vegetable broth and balsamic vinegar

It will take about 5 minutes of simmering until the liquid is cut in half

Add pepper and salt to taste

Toss the cooked pasta in the mushroom balsamic sauce after adding it to the pan

Add some fresh parsley on top, and serve it hot with grated Parmesan cheese

Marsala Burgers



These Marsala Burgers are a delightful twist on the classic burger, featuring a rich Marsala wine reduction sauce that adds a burst of flavor. Perfect for a special occasion or when you want to elevate your burger game!

Ingredients:

  • 1 lb ground beef
  • 1/2 cup Marsala wine
  • 1/4 cup diced onions
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 hamburger buns
  • 4 slices provolone cheese
  • 4 slices cooked bacon
  • Lettuce leaves
  • Tomato slices
  • Mayonnaise

Instructions:

Put ground beef, diced onions, minced garlic, salt, and black pepper in a bowl

Take the mixture and shape it into 4 burger patties

Set the grill or pan on medium-high heat

The burger patties should be cooked for four to five minutes on each side, or until they are done the way you like them

Put a slice of provolone cheese on top of each burger just before it's done cooking and let it melt

In a small saucepan, heat Marsala wine over medium-low heat until it cuts in half

Set this aside while you cook the burgers

You can use a grill or a toaster to toast the hamburger buns

Start by putting a lettuce leaf on the bottom bun

Then add a burger patty with melted cheese, a slice of cooked bacon, and a slice of tomato

Add mayonnaise to taste and place the other half of the bun on top of the burger

Drizzle the Marsala reduction over the burger

Warm up the Marsala Burgers and serve them with your favorite sides

Ingredients:

  • 1 pizza dough
  • 1 cup butternut squash puree

Instructions:

Sprinkle the crumbled blue cheese, caramelized onions, and chopped sage over the butternut squash puree

Remove from the oven and let it cool for a minute before slicing
